Ingredients

  • 1 1/2 cups water
  • 2 cups milk
  • 1 1/2 cups cornmeal
  • 1 1/2 teaspoons salt
  • 1 1/2 teaspoons sugar
  • 2 tablespoons butter or margarine
  • 5 eggs
  • 1 tablespoon baking powder
  • 2 cups cracklings

Instructions

  1. Preheat oven to 350°F.
  2. Grease a 2-quart baking dish.
  3. Combine water and milk and heat to simmer.
  4. Slowly add cornmeal, salt, sugar, and butter or margarine, stirring constantly.
  5. Cook over medium heat until the mixture is thickened, about 5 minutes.
  6. Remove from heat.
  7. Beat eggs with baking powder until very light and fluffy.
  8. Add beaten eggs to the cornmeal mixture and mix well.
  9. Stir in cracklings.
  10. Pour the mixture into the prepared dish.
  11. Bake at 350°F for 45 to 50 minutes.
  12. Serve hot.
