Cranberry Fudge

A rich, sweet cranberry fudge blending creamy vanilla chips with tangy dried cranberries and crunchy pecans, perfect for holiday treats or festive gatherings.

Ingredients

  • 2 cups sugar
  • 1/2 cup butter or margarine
  • 1/2 cup finely minced dried cranberries
  • 1/2 cup cream
  • 1 (10 oz.) package vanilla chips
  • 1 cup marshmallow cream
  • 2/3 cup chopped pecans

Instructions

  1. Combine the sugar, butter, dried cranberries, and cream in a heavy saucepan.
  2. Bring to a boil and then reduce heat to medium. Cook for 4 minutes, stirring constantly.
  3. Stir in the vanilla chips and continue cooking until the chips melt, about 1 minute longer.
  4. Remove from heat and stir in marshmallow cream and chopped pecans.
  5. Pour into a well buttered 8 or 9-inch square pan.
  6. Cool at room temperature.
  7. Keep the fudge refrigerated.
  8. For a richer pink color, add a little red food coloring.
