Ingredients

  • 2 c. flour
  • 1 1/2 tsp. baking powder
  • 1 c. granulated sugar
  • 1/2 tsp. salt
  • 1/2 tsp. baking soda
  • juice and rind of 1 orange
  • 2 Tbsp. melted shortening
  • boiling water
  • 1 beaten egg
  • 1 c. chopped walnut meats
  • 1 c. raw cranberries

Instructions

  1. Sift the flour, baking powder, sugar, salt, and baking soda together.
  2. To the juice and rind of the orange, add the melted shortening and enough boiling water to make 3/4 cup.
  3. Combine the orange mixture with the beaten egg and add it to the dry ingredients.
  4. Stir in the chopped walnuts if desired.
  5. Fold in the chopped cranberries.
  6. Mix well and pour the batter into a greased and lined bread pan.
  7. Bake at 325°F for 1 hour.
