Cranberry-Pineapple Bread

Ingredients

  • 1 1/4 c. flour
  • 1 c. brown sugar, packed
  • 1/3 c. shortening
  • 1 Tbsp. vegetable oil
  • 2 large eggs
  • 1/2 c. chopped walnuts
  • 1/2 c. shredded coconut
  • 1 tsp. vanilla
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 c. quartered cranberries
  • 1 (8 oz.) can crushed pineapple

Instructions

  1. Place all in a large mixing bowl.
  2. Blend at low speed until all is moistened, then at medium speed for 2 minutes.
  3. Spread in loaf pan.
  4. Bake at 350° for 35 to 40 minutes.
  5. Last few minutes of baking, sprinkle with coconut or dust with powdered sugar when cool.
