Ingredients

  • 2 acorn squash
  • 1 cup cranberries
  • 1 cup brown sugar, firmly packed
  • 1 teaspoon cinnamon
  • 1 tablespoon butter or margarine

Instructions

  1. Cut 1-inch off the tops of the acorn squash.
  2. Remove the seeds from the squash.
  3. Combine cranberries, brown sugar, and cinnamon in a small bowl.
  4. Pack half of the cranberry mixture into each squash cavity.
  5. Dot the filling with butter or margarine.
  6. Place the stuffed squash in an 8 x 8 x 2-inch dish.
  7. Cover loosely with heavy-duty plastic wrap and microwave until tender.
