  • lettuce
  • 1 can whole cranberry sauce
  • 1 (16 oz.) can crushed pineapple (undrained)

Instructions

  1. Drain juice from frozen strawberries and add enough water to make 1 1/2 cups.
  2. Bring the strawberry mixture to a boil and dissolve the strawberry jello in it.
  3. Add the mashed bananas, whole cranberry sauce, and crushed pineapple (undrained) to the jello mixture and mix well.
  4. Pour the mixture into a mold and refrigerate until set.
  5. Place the mold on a bed of lettuce and top with Cool Whip before serving.

Tips & Substitutions

For a vibrant flavor, use fresh strawberries if available, but frozen works well too. You can substitute the mashed bananas with applesauce for a different taste or to reduce calories. If you're not a fan of gelatin, consider using agar-agar as a vegetarian alternative. Ensure the mixture is fully cooled before pouring into the mold for the best texture.

Serving Suggestions

Serve this refreshing salad mold as a light dessert or a side dish during gatherings. It pairs beautifully with savory dishes like roasted chicken or grilled vegetables. Consider serving it alongside other fruity options like Fruit With Lemon Pudding for a delightful spread.

Storage & Reheating

Store any leftovers in an airtight container in the refrigerator for up to three days. If the mold begins to lose its shape, you can gently reshape it with your hands before serving. Avoid freezing, as this may alter the texture of the fruit and jello mixture.
