Cranberry Swirl Bread

Ingredients

  • 1/3 cup granulated sugar
  • 1 pack - quick rise yeast (1/4oz)
  • 1/2 tsp salt
  • 3 cup -3 -1/2 flour
  • 1/2 cup water
  • 1/2 cup milk
  • 1/3 cup butter cubed
  • 1 1/2 cup fresh or frozen cranberries
  • 1/4 cup packed Brown sugar
  • 1 tsp cornstarch
  • 1/4 cup water
  • 1 tbsp lemon juice
  • 1/2 cup chopped pecans

Instructions

  1. In a large bowl mix sugar , yeast , salt & 1 cup of flour.
  2. ( I used my Kitchen aid mixer).
  3. In a small sausepan over medium high heat.
  4. Heat water, milk, butter until butter is melted.
  5. Cool until luke warm.
  6. 120 degrees .
  7. Add liquid to dry ingredients and beat on medium speed 2 minutes.
  8. Stir in enough flour 1 cup at a time until a smooth dough is formed.
  9. Turn dough onto floured surface and knead till smooth and elastic 5-6 minutes.
  10. Place dough in a greased bowl.
  11. Cover with plastic wrap and let rise for 1 hour or until doubled.
  12. Meanwhile in a sausepan combine cranberries , Brown Sugar, cornstarch, water.
  13. Cook over medium high until mixture thickens and cranberries burst.
  14. 10-15 minutes.
  15. Remove from heat stir in butter , lemon juice, pecans.
  16. Punch down dough and turn onto a lightly floured surface.
  17. Roll to 10-20" rectangle.
  18. Spread filling to within 1/2" of edges .Roll up jelly roll style.
  19. Starting on long side.
  20. Pinch seam to seal.
  21. Transfer seam side down to a greased 9x5" loaf pan.
  22. Arranging in a zig zag fashion to fit.
  23. Allow to double 30-40 minutes.
  24. Preheat oven to 350 degrees .
  25. Bake loaf 40-45 minutes or until golden brown.
  26. Cooling in pan 10 minutes.
  27. Before removing to wire rack to cool.
  28. Mix confectioners sugar and milk.
  29. Drizzle over cooled bread.
