Ingredients

  • 2 cups cored, peeled, finely chopped baking apples
  • 3/4 cup granulated sugar
  • 2 tablespoons oil
  • 1 egg
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 cup fresh or frozen cranberries
  • 1/2 cup chopped walnuts

Instructions

  1. Heat the oven to 350°F and grease a 4 1/2 x 2-inch loaf pan.
  2. Combine the chopped apples, granulated sugar, and oil in a medium bowl.
  3. Add the egg and mix well.
  4. In a separate bowl, combine the all-purpose flour, baking powder, baking soda, and cinnamon.
  5. Add the dry ingredients to the apple mixture and stir well.
  6. Stir in the cranberries and chopped walnuts.
  7. Spread the batter evenly into the prepared loaf pan.
  8. Bake for 1 hour or until a toothpick inserted into the center comes out clean.
