Ingredients

  • 1 red bell pepper, sliced into rings
  • 1 yellow bell pepper, sliced into rings
  • 1 green bell pepper, sliced into rings
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1 cup chunky salsa
  • 1 pound crawfish tails, rinsed and drained
  • 1 tablespoon grated lemon rind

Instructions

  1. Layer red, yellow, and green bell pepper rings in a 13 x 9-inch baking dish.
  2. Combine olive oil and minced garlic; drizzle over the pepper rings.
  3. Bake at 400°F for 20 minutes.
  4. Remove from oven and stir salsa into the pepper rings.
  5. Top with crawfish tails, sprinkle with lemon rind and grated Monterey Jack cheese.
  6. Return to oven and bake for an additional 10 to 12 minutes.
  7. Garnish with lemon slices and fresh cilantro sprigs before serving.
