- Layer red, yellow, and green bell pepper rings in a 13 x 9-inch baking dish.
- Combine olive oil and minced garlic; drizzle over the pepper rings.
- Bake at 400°F for 20 minutes.
- Remove from oven and stir salsa into the pepper rings.
- Top with crawfish tails, sprinkle with lemon rind and grated Monterey Jack cheese.
- Return to oven and bake for an additional 10 to 12 minutes.
