Ingredients

  • 1 cup sugar
  • 4 rounded tablespoons flour or cornstarch
  • 5 or 6 egg yolks
  • 1/2 cube butter
  • 6 cups milk
  • 1 teaspoon vanilla
  • pinch of salt

Instructions

  1. In a saucepan, combine sugar, flour (or cornstarch as a substitute), and salt.
  2. Gradually add milk, stirring constantly to prevent lumps.
  3. Cook over medium heat until the mixture thickens and comes to a boil.
  4. Remove from heat and whisk in the egg yolks one at a time.
  5. Return to heat and cook for a few more minutes until the mixture is smooth and thickened.
  6. Remove from heat and stir in vanilla and butter until melted and well combined.
  7. Pour the filling into prepared pie crusts or serving dishes.
  8. Chill in the refrigerator for at least 2 hours before serving.
