  • 1/3 cup Wesson oil

  • 1 1/2 pounds ripe tomatoes, peeled, seeded and chopped or 1 (16 oz.) can chopped, stewed tomatoes
  • 2 (14 1/2 oz.) cans chicken broth
  • 1/2 cup half and half
  • 1/4 cup fresh basil or 3 tablespoons fresh parsley chopped with 1 tablespoon dried basil
  • 1 teaspoon sugar
  • 1/2 teaspoon salt

Instructions

  1. In a large saucepan, heat Wesson oil and saute the chopped onion and minced garlic until tender but not browned.
  2. Stir in the flour and cook for 1 minute.
  3. Add the chopped tomatoes or canned stewed tomatoes, chicken broth, half and half, chopped basil or parsley with dried basil, sugar, and salt.
  4. Stir until well blended and simmer uncovered for 20 minutes.
  5. Allow the soup to cool slightly, then pour it into a blender or food processor, one third at a time.
  6. Puree until smooth and serve.
