Ingredients

  • 2 packages frozen broccoli spears
  • 4 chicken breasts
  • 2 cans cream of chicken soup
  • 1/2 cup mayonnaise
  • 1/4 tablespoon curry powder
  • 1/2 cup shredded sharp cheese
  • 1 tablespoon lemon juice
  • 1/2 cup cracker crumbs

Instructions

  1. Cook broccoli as directed on package until almost done.
  2. Cut each broccoli spear across the middle to make it easier to serve.
  3. Place the cooked broccoli in a large flat Pyrex baking dish.
  4. Boil chicken breasts in water until tender.
  5. Bone the chicken breasts and cut into pieces, then place on top of the broccoli.
  6. Combine undiluted cream of chicken soup, mayonnaise, curry powder, shredded cheese, and lemon juice.
  7. Stir over heat until the cheese melts and the mixture is smooth.
  8. Pour the sauce over the chicken and broccoli in the baking dish.
  9. Top with cracker crumbs mixed with melted margarine or buttered crumbs.
  10. Bake at 350°F for 30 to 45 minutes until bubbly and golden.
