Ingredients

  • 3 lb. potatoes
  • 1 large onion
  • 1 lb. bacon
  • Velveeta cheese

Instructions

  1. Peel the potatoes and slice them into thin squares.
  2. Dice the large onion into small pieces.
  3. Grease a large baking dish with oil or nonstick spray.
  4. Layer the bottom of the pan with bacon slices.
  5. Add a layer of half the sliced potatoes, followed by diced onion and slices of Velveeta cheese.
  6. Repeat the layering with bacon, remaining potatoes, onions, and Velveeta.
  7. Cover the dish with foil.
  8. Bake at 350°F (175°C) for 1 to 1.5 hours or until the potatoes are tender.
