Creole Corn Pudding

Ingredients

  • 3 tbsp. butter
  • 1 onion, chopped fine
  • 1/2 bell pepper, chopped fine
  • 2 c. whole kernel corn, fresh or canned
  • 2 tbsp. chopped pimento peppers
  • 1 tbsp. sugar
  • 1 tsp. salt
  • 1 tsp. pepper
  • 3 eggs, well beaten
  • 1/2 c. grated cheddar cheese

Instructions

  1. Melt butter in skillet. Saute onion & bell pepper. Add corn, sugar, salt, pepper & pimentos. Cool & add cheese & well beaten eggs. Pour into buttered 2-quart casserole & set in pan of hot water.Bake 35 minutes at 350 degrees. Serve at once.
