Ingredients

  • 4 qt. sliced cucumbers
  • 2 onions, sliced
  • 3 Tbsp. salt
  • 2 c. sugar
  • 1 tsp. turmeric
  • 1 tsp. celery seed
  • 1 Tbsp. white mustard seed
  • 2 c. vinegar
  • a small amount of green food coloring

Instructions

  1. Slice cucumbers 1/8-inch thick without paring.
  2. Add sliced onions and salt to the cucumbers.
  3. Cover with cracked ice and mix thoroughly.
  4. Let stand for 3 hours, then drain thoroughly.
  5. Combine sugar, turmeric, celery seed, mustard seed, vinegar, and green food coloring in a pot and bring to a boil.
  6. Drop the drained cucumber slices into the boiling mixture.
  7. Cook until the slices become transparent.
  8. Seal the hot pickles in sterilized jars.
