Ingredients

  • 1/4 cup butter or margarine
  • 1/4 teaspoon paprika
  • 1/4 teaspoon lemon pepper
  • 1/2 cup saltine or club style crackers
  • 1/2 cup potato chips
  • 1 pound crappie fillets

Instructions

  1. Melt the butter and pour into a shallow bowl.
  2. Add the paprika and lemon pepper to the melted butter.
  3. Crush the saltine crackers and potato chips into small crumbs.
  4. Mix the crushed crackers and chips together in a small bowl and pour onto a plate or waxed paper.
  5. Dip the fish fillets in the butter mixture, then coat them with the crumb mixture.
  6. Place the coated fillets in a single layer in a shallow baking pan.
  7. Bake at 350°F for 8 minutes for small fillets and 10 minutes for large fillets.
  8. Turn the oven to broil and cook the fish for 5 to 7 minutes or until nicely browned.
