Ingredients

  • 2 broiler-fryer chickens, cut in serving pieces
  • 1/2 cup butter or margarine
  • 1 (8 oz.) package herb seasoned stuffing, crushed
  • 1/2 teaspoon salt
  • 1 egg
  • 2 tablespoons water

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Put butter in a 15 x 10 x 1-inch baking pan and place in the oven until melted.
  3. Meanwhile, combine crushed stuffing and salt in a plastic or brown paper bag.
  4. Beat the egg with water to make an egg wash.
  5. Dip chicken pieces into the egg wash, then shake a few pieces at a time in the bag to coat well.
  6. Place chicken, skin side down, in the melted butter in the baking pan.
  7. Bake uncovered in the oven at 400°F (200°C) for 30 minutes.
  8. Turn the chicken pieces and continue baking for another 30 minutes or until tender and golden.
