Ingredients

  • 2 lb. new potatoes
  • 1/2 cup sliced almonds, toasted
  • 1/2 cup sliced green onions
  • 1/4 cup butter or margarine, melted
  • 1/2 cup shredded Parmesan cheese
  • salt to taste

Instructions

  1. In a medium-sized saucepan, cover potatoes with water.
  2. Place over high heat and bring to a boil.
  3. Reduce heat and simmer until potatoes are tender, about 15 minutes.
  4. Preheat oven to 350°F.
  5. Slice the cooked potatoes and layer them in a 9 x 13 x 2-inch baking dish.
  6. Sprinkle the sliced potatoes with toasted sliced almonds and sliced green onions.
  7. Drizzle with melted butter or margarine and sprinkle with shredded Parmesan cheese.
  8. Bake for 30 minutes or until the cheese is melted and lightly browned.
