Ingredients

  • 3 Tbsp butter or margarine
  • 1 large egg
  • 3/4 cup grated Romano cheese
  • 2 Tbsp flour
  • 3 Tbsp salad oil
  • 6 fillets (4 oz each)
  • 1/2 cup chopped cashews

Instructions

  1. Preheat oven to 425°F.
  2. In a baking pan, melt butter in the oven.
  3. Meanwhile, in a pie plate, beat the egg slightly.
  4. On waxed paper, combine grated Romano cheese and flour.
  5. Dip each fish fillet in the beaten egg, then coat both sides with the cheese and flour mixture.
  6. Remove the pan from the oven and add salad oil to the melted butter.
  7. Swirl to blend the butter and oil mixture.
  8. Arrange the coated fillets in the pan, turning to coat with the butter mixture.
  9. Sprinkle the fillets with chopped cashews.
  10. Bake on the top rack for 10 minutes.
  11. Garnish the fillets with lemon wedges before serving.
