Crispy potato chicken combines tender baked chicken with a golden, crunchy potato topping, infused with Dijon mustard and garlic, perfect for a hearty, satisfying meal.

Ingredients

  • 1 medium potato
  • 2 Tbsp. Dijon mustard
  • 1/2 tsp. chopped garlic
  • 1 lb. boneless, skinless chicken breasts
  • 1 tsp. oil
  • 1 tsp. pepper

Instructions

  1. Preheat oven to 425°F.
  2. Arrange chicken breasts in a 9 x 9-inch baking dish that has been sprayed with nonstick coating.
  3. Mix Dijon mustard and chopped garlic together.
  4. Spread the mustard and garlic mixture over the chicken breasts.
  5. Scrub the potato, then grate it and mix well with oil.
  6. Spread the grated potato mixture over the chicken in the baking dish.
  7. Sprinkle with pepper.
  8. Bake for 25 to 35 minutes, until the chicken is cooked through and the potatoes are golden.
