Cranberry-Pear Chicken

Ingredients

  • 1 pkg. boneless chicken breasts
  • 1 Tbsp. vegetable oil
  • salt to taste
  • pepper to taste
  • 1 onion, chopped
  • 3 firm pears, peeled, cored and diced
  • 1/2 cup fresh cranberries
  • 1 can whole cranberry sauce

Instructions

  1. Trim and discard visible fat from chicken breasts.
  2. In a large nonstick skillet, over medium-high heat, heat 1 1/2 teaspoons of oil.
  3. Sprinkle chicken breasts lightly with salt and pepper.
  4. Brown chicken about 2 minutes per side.
  5. Remove chicken from pan and set aside.
  6. Add remaining oil to the skillet and cook chopped onions until softened, about 4 minutes.
  7. Add diced pears, cranberries, ground cinnamon, and ground ginger if using.
  8. Stir to combine well.
  9. Place the chicken on top of the fruit and onions in the skillet.
  10. Cover and simmer for 10 to 12 minutes until chicken is cooked through.
  11. Serve with brown or wild rice.
