Cranberry-Pear Chicken

- Trim and discard visible fat from chicken breasts.
- In a large nonstick skillet, over medium-high heat, heat 1 1/2 teaspoons of oil.
- Sprinkle chicken breasts lightly with salt and pepper.
- Brown chicken about 2 minutes per side.
- Remove chicken from pan and set aside.
- Add remaining oil to the skillet and cook chopped onions until softened, about 4 minutes.
- Add diced pears, cranberries, ground cinnamon, and ground ginger if using.
- Stir to combine well.
- Place the chicken on top of the fruit and onions in the skillet.
- Cover and simmer for 10 to 12 minutes until chicken is cooked through.
- Serve with brown or wild rice.
