Ingredients

  • 2 cups flour
  • 1/4 cup sugar
  • 2 tablespoons shortening
  • 2 tablespoons lemon peel or juice
  • 2 or 3 apples, thinly sliced
  • pinch of salt
  • 1/4 cup butter
  • 1 egg
  • apricot preserves

Instructions

  1. Make the crust by combining flour, sugar, salt, butter, shortening, egg, and lemon peel.
  2. Roll out the dough to at least 1/4 inch thickness.
  3. Line a pie pan with the dough, having about a 1-inch edge.
  4. Spread a thin coat of apricot preserves over the unbaked crust.
  5. Arrange the apple slices in overlapping rings to cover the crust in one layer.
  6. Drop several spoonfuls of preserves over the apples and spread carefully to keep the apples in place.
  7. Bake in a 350°F (175°C) oven for about 60 minutes until the crust is golden brown.
