Crown Lamb Roast

- Heat oven to 425°F. In a food processor or blender, pulse mint, parsley, walnuts, cheese and garlic 3 times. Add oil. Pulse 5 times or until smooth. Season with 2 teaspoons of salt and 1/2 teaspoon black pepper, if desired. Place lamb in a roasting pan.
- Season with 1 teaspoon of salt and 1/4 teaspoon of pepper, if desired. Spread mint mixture evenly over lamb. Roast for 30 mins or until inserted thermometer, not touching bone, reads 140°F for medium rare. Let it sit for 10 mins before slicing. Garnish with fresh mint and sliced plums and oranges.
