Crown Lamb Roast

Ingredients

  • 1 1/2 cups fresh mint
  • 1 cup fresh parsley
  • 1/2 cup toasted walnuts
  • 2 tbsp grated parmesan cheese
  • 1 None large clove garlic, peeled
  • 1/2 cup olive oil
  • 1 None roast of lamb (about 5 1/2 lbs)
  • None None crown plums, for garnish
  • None None orange, for garnish

Instructions

  1. Heat oven to 425°F. In a food processor or blender, pulse mint, parsley, walnuts, cheese and garlic 3 times. Add oil. Pulse 5 times or until smooth. Season with 2 teaspoons of salt and 1/2 teaspoon black pepper, if desired. Place lamb in a roasting pan.
  2. Season with 1 teaspoon of salt and 1/4 teaspoon of pepper, if desired. Spread mint mixture evenly over lamb. Roast for 30 mins or until inserted thermometer, not touching bone, reads 140°F for medium rare. Let it sit for 10 mins before slicing. Garnish with fresh mint and sliced plums and oranges.
