Ingredients

  • 1/2 cup skim milk
  • 4 slices bread, made into fresh bread crumbs
  • 2/3 cup grated Parmesan cheese
  • 1 tablespoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon pepper
  • 1 chicken (3 to 4 lb.), cut up and skin removed

Instructions

  1. Preheat oven to 350°F.
  2. Coat a 13 x 9-inch pan with vegetable cooking spray.
  3. Put skim milk in a shallow dish.
  4. Mix bread crumbs, Parmesan cheese, paprika, salt, onion powder, garlic powder, and pepper in a medium bowl.
  5. Dip each piece of chicken in milk, then in the crumb mixture, pressing to adhere and form a thick, even coating.
  6. Arrange chicken pieces, meaty sides up, in the prepared pan in a single layer.
  7. Bake for 1 hour or until browned and juices run clear.
