Ingredients

  • 2 (1 lb.) cans tart red cherries
  • 3/4 cup sugar
  • 3 1/2 Tbsp. cornstarch
  • 1/4 tsp. salt
  • 1/2 tsp. grated lemon peel
  • 2 Tbsp. lemon juice
  • 9-inch unbaked pie shell
  • 1/2 cup flour
  • 1/2 tsp. cinnamon
  • 1/4 tsp. mace

Instructions

  1. Drain cherries, reserving 1 1/4 cups liquid.
  2. Combine 3/4 cup sugar, cornstarch, and salt in a saucepan.
  3. Add the reserved liquid to the mixture.
  4. Cook over medium heat, stirring constantly until thickened.
  5. Stir in cherries, grated lemon peel, and lemon juice.
  6. Pour the cherry filling into the unbaked pie shell.
  7. Add crumb topping if desired and bake until golden brown.
