Crunchee Barley Salad
Ingredients
- 2 cups barley, cooked and drained ⓘ
- 1 cup celery, chopped ⓘ
- 12 cup water chestnut, chopped ⓘ
- 14 cup green onion, use some tops ⓘ
- 14 cup green pepper, chopped ⓘ
- 14 cup red pepper, chopped ⓘ
- 1 cup ham, cubed ⓘ
- 1 (2/3 ounce) package dried Italian salad dressing mix (2/3 ounce) ⓘ
- 13 cup sugar ⓘ
- 14 cup oil ⓘ
- 12 cup cider, vingar ⓘ
Instructions
- 1 cup uncooked barley equals 2 cups cooked barley, drained well.
- You can use turkey ham for a lower calorie salad.
- Mix salad ingredients.
- Combine dressing ingredients and mix well.
- Pour over salad and toss.
- Cover and chill several hours.
- You can garnish the salad with tomato wedges and parsley.
