Ingredients

  • 8 strips bacon
  • 3 eggs
  • 1 1/2 cups milk
  • 1/2 cup buttermilk baking mix
  • 1/2 cup margarine, melted
  • 1 cup shredded Cheddar cheese

Instructions

  1. Fry bacon until crisp, then drain on paper towels.
  2. Combine eggs, milk, dash of pepper, baking mix, and melted margarine in a blender.
  3. Cover and blend for 15 seconds.
  4. Pour the mixture into a greased 9-inch pie plate.
  5. Sprinkle the cooked bacon and shredded Cheddar cheese evenly into the mixture.
  6. Bake in a 350°F (175°C) oven for 30 minutes or until a knife inserted halfway between center and edge comes out clean.
  7. Let stand for 10 minutes before serving.
