A flavorful Cuban black bean dish with savory, smoky, and tangy notes, perfect for a hearty, plant-based meal or as a side with rice and plantain chips.

Ingredients

  • 2 cans black beans
  • 1 large yellow onion
  • 1/2 jar pimento
  • 3 Tbsp. crushed garlic
  • 1 green pepper
  • 6 oz. jar green or black olives

Instructions

  1. Saute chopped onion, crushed garlic, and chopped green pepper in 1 tablespoon of oil until fragrant.
  2. Add 1 teaspoon of sugar, then include the drained black beans, pimento, chopped olives, and green or black olives.
  3. Season with salt and pepper to taste.
  4. Cook over low heat for 45 minutes, stirring occasionally.
  5. Squeeze fresh orange juice over the mixture before serving.
  6. Serve with plantain chips.
