Ingredients

  • 1 whole head garlic
  • 1 medium onion, sliced
  • 2 Tbsp. salt
  • 1 1/2 Tbsp. oregano
  • 2 tsp. cumin
  • 1 tsp. fresh crushed pepper
  • juice of 2 lemons
  • juice of 2 grapefruits

Instructions

  1. Pinch roast all over with a fork.
  2. Crush garlic with seasonings and citrus juices and add onion slices.
  3. Pour marinade over the roast and marinate for 24 hours, turning several times.
  4. Bake at 325°F until the meat temperature reaches 175°F on a meat thermometer.
  5. Bake covered for the first hour, then uncover for the remainder of the cook time.
