Cucumber Congealed Salad

Ingredients

  • 1 (3 oz.) pkg. lime gelatin
  • 1/4 tsp. salt
  • 1 c. boiling water
  • 1 c. mayonnaise
  • 1/2 c. sour cream
  • 1 c. chopped cucumbers

Instructions

  1. Dissolve the lime gelatin and salt in boiling water; allow to cool.
  2. Puree cucumbers in a food processor.
  3. Combine mayonnaise and sour cream; mix well, then stir into the gelatin mixture.
  4. Chill until slightly congealed, then fold in the chopped cucumbers.
  5. Pour the mixture into a mold or Pyrex dish, depending on serving preference.
  6. Chill in the refrigerator until firmly congealed.
