Ingredients

  • 7 lb cucumbers
  • 2 cups pickling lime
  • 2 gallons water

Instructions

  1. Mix 2 gallons of water with 2 cups of pickling lime to create the lime water.
  2. Soak the sliced cucumbers in the lime water for 24 hours, stirring occasionally.
  3. Use enamelware for soaking; do not use aluminumware.
  4. Remove the cucumbers from the lime water and rinse thoroughly in three cool waters.
  5. Soak the rinsed cucumbers in ice and water for an additional 3 hours.
  6. Carefully remove the cucumbers and let them drain.
