Diabetic Apple Jelly Spread
A light, fruity jelly spread with warm spice notes, ideal for diabetics and those seeking a low-sugar, flavorful condiment using apple juice and natural sweeteners.

Instructions
- Soak 2 teaspoons of gelatin in 1/2 cup of cold water and set aside.
- Combine 2 cups of unsweetened apple juice, 1 teaspoon of lemon juice, and 6 or 8 cloves in a saucepan and bring to a boil.
- Reduce heat and simmer gently for 10 minutes, then remove from heat.
- Discard the cloves from the mixture.
- Add the soaked gelatin to the hot apple juice mixture and stir until fully dissolved.
- Mix in artificial sweetener equivalent to 3/4 cup of sugar.
- Add 3 drops of red food coloring and stir well to combine.
- Carefully pour the mixture into 2 clean, hot 1/3 pint jars.
- Allow the jelly to cool slightly, then cover lightly until cooled completely.
- Once cooled, cover tightly and store in the refrigerator.
