Diabetic Apple Jelly Spread

Ingredients

  • 2 cups unsweetened apple juice
  • 6 large or 8 small cloves
  • 1/2 cup cold water
  • 3 drops red food coloring
  • 1 teaspoon lemon juice
  • 2 teaspoons gelatin

Instructions

  1. Soak 2 teaspoons of gelatin in 1/2 cup of cold water and set aside.
  2. Combine 2 cups of unsweetened apple juice, 1 teaspoon of lemon juice, and 6 or 8 cloves in a saucepan and bring to a boil.
  3. Reduce heat and simmer gently for 10 minutes, then remove from heat.
  4. Discard the cloves from the mixture.
  5. Add the soaked gelatin to the hot apple juice mixture and stir until fully dissolved.
  6. Mix in artificial sweetener equivalent to 3/4 cup of sugar.
  7. Add 3 drops of red food coloring and stir well to combine.
  8. Carefully pour the mixture into 2 clean, hot 1/3 pint jars.
  9. Allow the jelly to cool slightly, then cover lightly until cooled completely.
  10. Once cooled, cover tightly and store in the refrigerator.
