Ingredients

  • 7 lb. cucumbers
  • 2 c. lime
  • 12 medium onions
  • 5 bell peppers
  • 2 qt. white vinegar
  • 7 c. sugar
  • 1 tsp. salt
  • 3 tsp. celery seed
  • 4 tsp. whole pickling spice

Instructions

  1. Mix lime with 2 gallons of water and pour over cucumbers.
  2. Soak cucumbers for 24 hours.
  3. Rinse cucumbers well.
  4. Slice onions and bell peppers.
  5. Cover sliced vegetables with ice water.
  6. Let stand for 3 hours and then drain.
  7. Combine white vinegar, sugar, salt, celery seed, and pickling spice in a pot.
  8. Pour the vinegar mixture over the drained cucumbers and let stand overnight.
  9. Bring the mixture to a boil and simmer for 20 minutes.
  10. Pour the hot pickles into jars and seal.
