Ingredients

  • 4 gallons cucumbers
  • 4 cups salt
  • 10 pounds sugar
  • 1 box pickling spice
  • 1 gallon vinegar

Instructions

  1. Cover whole cucumbers with a brine water made of 4 cups salt and soak for 7 days.
  2. Rinse the cucumbers thoroughly.
  3. Cut the cucumbers and place them in a churn with 2 large boxes of alum and enough water to cover for 2 days.
  4. Remove from alum water and drain the cucumbers.
  5. Put the cucumbers back into the churn with vinegar and let stand for 1 day.
  6. Drain the vinegar and place the cucumbers back into the churn.
  7. Layer the cucumbers with sugar and 10 pounds of sugar in the churn.
  8. Midway up the churn, place a cloth with a bag containing 1 box of pickling spice.
  9. Let the mixture stand for a week or more, mixing by hand every day.
  10. Finally, put the pickles into jars and add a few drops of green food coloring to enhance their appearance.
