Cuisinart Banana Bread

Ingredients

  • 2 c. flour
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 c. walnuts or pecans, chopped
  • 2 large ripe bananas, peeled and cut into 1-inch pieces
  • 1 c. sugar
  • 3 large eggs
  • 1 stick butter (at room temperature), quartered
  • 1/2 c. buttermilk
  • 2 tsp. vanilla extract

Instructions

  1. Preheat oven to 350°.
  2. Use metal blade.
  3. Put the flour, baking soda, baking powder, salt and nuts in the work bowl and process for 10 seconds or until the nuts are coarsely chopped.
  4. Remove the mixture and reserve it.
  5. (Make several loaves in sequence by processing all the dry ingredients and nuts for each recipe first. You won't have to wash the work bowl between batches of batter for each loaf.) Process the bananas for 1 minute or until pureed. Add the
  6. sugar and eggs and process the mixture for 1 minute.
  7. Add the butter and process for 1 minute.
  8. With the machine running, pour the buttermilk and vanilla through the feed tube.
  9. Blend in the reserved nut mixture by turning the machine on and off 3 to 5 times or until the flour just disappears.
  10. Do not overprocess the batter.
  11. Pour the batter into a buttered and floured 7-cup loaf pan and bake for 1 hour or until the bread is brown and a cake tester inserted in the center comes out clean.
  12. Turn the bread out on a wire rack and let it cool.
  13. Makes 1 loaf.
