Cumin Spiced Potatoes

Ingredients

  • 3 lb red potatoes; quartered
  • 3/4 cup salsa verde
  • 1 tbsp roasted & ground cumin
  • 1 tbsp paprika
  • 1 tbsp onion powder
  • 1 tbsp garlic powder
  • 2 tsp cumin seed
  • 2 tsp Mexican oregano; dried
  • 2 tsp ancho chile powder
  • 1 tsp cayenne pepper
  • 1 salt and pepper
  • 1 vegetable oil; as needed

Instructions

  1. Marinate potatoes in salsa for 4-48 hours.
  2. Drain.
  3. Pat dry.
  4. Toss with enough oil to cover.
  5. Season.
  6. Roast at 375 for approximately 40-45 minutes or until potatoes are caramelized and fork tender.
  7. Shake pan a few times while cooking to toss around potatoes for even cooking and caramelization.
  8.
