- Place the saucepan over high heat and cover.
- When the broth boils, stir in the mini lasagna noodles.
- Let the broth boil again.
- Turn the burner to medium-low.
- Cover the pan and cook for 12 minutes or until the noodles are almost tender.
- Stir in the diced chicken, stewed tomatoes, and mixed vegetables.
- Turn the burner to medium-high.
- Cover and cook for about 5 minutes or until the soup boils again.
- Turn off the burner.
- Remove the saucepan from heat and serve.
