Ingredients

  • 3 cans chicken broth (14 1/2 oz. each)
  • 1 1/2 cups mini lasagna noodles
  • 9 oz. frozen diced chicken meat
  • 8 oz. can stewed tomatoes
  • 1 cup frozen mixed vegetables

Instructions

  1. Pour chicken broth into a large saucepan.
  2. Place the saucepan over high heat and cover.
  3. When the broth boils, stir in the mini lasagna noodles.
  4. Let the broth boil again.
  5. Turn the burner to medium-low.
  6. Cover the pan and cook for 12 minutes or until the noodles are almost tender.
  7. Stir in the diced chicken, stewed tomatoes, and mixed vegetables.
  8. Turn the burner to medium-high.
  9. Cover and cook for about 5 minutes or until the soup boils again.
  10. Turn off the burner.
  11. Remove the saucepan from heat and serve.
