Ingredients

  • 1 1/2 cups sliced celery with leaves
  • 1/2 cup chopped onion
  • 1/2 cup sliced carrot
  • 1 cup diced potato
  • 1/2 teaspoon minced garlic
  • 1/2 teaspoon salt
  • 1 teaspoon curry powder
  • 2 cups chicken broth, divided
  • 1 cup condensed skim milk

Instructions

  1. In a medium saucepan, place celery, onion, carrot, potato, garlic, salt, curry powder, and 1 cup of chicken broth.
  2. Bring to a boil.
  3. Reduce heat and simmer, covered, until vegetables are tender, about 15 minutes.
  4. Pour half of the vegetable mixture into a blender and blend until smooth.
  5. Remove and repeat with the remaining vegetable mixture.
  6. Return all the pureed vegetable mixture to the saucepan.
  7. Add condensed skim milk and the remaining chicken broth to achieve desired consistency.
  8. Heat only until hot; do not boil.
