Ingredients

  • 1 Tbsp. butter
  • 40 medium mushrooms, washed, caps whole, stems removed
  • 1/2 tsp. thyme
  • 1/2 tsp. rosemary
  • freshly ground pepper
  • 2 cups chicken bouillon
  • 1/2 cup wild rice
  • 1 shallot
  • 2 cloves garlic
  • 1/4 cup chopped almonds
  • fresh lemon

Instructions

  1. Bring chicken bouillon to a boil.
  2. Add washed wild rice, cover, and simmer for 1 hour.
  3. Remove from heat and set aside.
  4. Saute mushroom caps in butter until lightly browned.
  5. Mix cooked rice, chopped almonds, thyme, rosemary, and freshly ground pepper.
  6. Fill mushroom caps with the rice mixture.
  7. Drizzle with fresh lemon juice.
  8. Bake on a cookie sheet at 300°F for 15 minutes.
