Curried Chickpea and Hummus Sandwich

Ingredients

  • 1 can (15 Oz. Size) Chickpeas, Drained And Rinsed
  • 2 cups Cauliflower Florets, Cut Into Small Bite Size Pieces
  • 2 Tablespoons Olive Oil
  • 1 teaspoon Curry Powder, Or To Taste
  • 1 cup Hummus
  • 1 Tablespoon Lemon Juice
  • 4 slices Naan Or Pita Bread
  • Salt And Pepper, to taste
  • 4 whole Carrots, Shredded
  • 2 whole Scallions, Chopped

Instructions

  1. Preheat the oven to 400 F.
  2. In a large bowl, combine the chickpeas, cauliflower, olive oil and curry powder.
  3. Spread them out on a baking sheet lined with parchment paper and roast in the oven for 30 minutes.
  4. Combine the hummus and lemon juice.
  5. Divide the mixture in half and spread one half of the mixture evenly on one side of each of the slices of naan bread.
  6. Combine the other half with the roasted chickpeas, cauliflower, carrots and scallions.
  7. Season with salt and pepper to taste and spoon onto the bread.
  8. Top with carrots, scallions and greens, if desired.
