Curried Orange Chicken

Ingredients

  • 2 1/2 lb. fryer chicken
  • 3/4 tsp. curry powder
  • 6 Tbsp. orange juice
  • 3 Tbsp. honey
  • 1 1/2 tsp. prepared mustard
  • 1 Tbsp. cornstarch
  • 1 1/2 Tbsp. cold water
  • 1/2 orange, peeled, sliced and quartered

Instructions

  1. Cut up the chicken into pieces and sprinkle with curry powder. Rub the curry into the meat.
  2. Arrange the chicken pieces in a baking dish, skin side down.
  3. Combine orange juice, honey, and prepared mustard in a small saucepan.
  4. Simmer the mixture until blended and slightly thickened.
  5. Pour the orange sauce over the chicken in the baking dish.
  6. Bake in a 375°F oven for 30 minutes.
  7. Turn the chicken pieces and continue baking for 20 minutes longer or until tender.
  8. Remove the chicken to a serving platter.
  9. Keep warm and serve.
