Ingredients

  • 4 Tbsp. butter
  • 3/4 c. chopped onion
  • 2 Tbsp. curry powder
  • 3 (14 oz.) cans Italian tomatoes
  • 3 c. chicken broth
  • 1 bay leaf
  • 1/2 c. sour cream

Instructions

  1. Heat the butter in a saucepan; add the chopped onion and cook slowly, stirring until tender, but not browned.
  2. Stir in the curry powder and cook for 5 minutes.
  3. Add the canned Italian tomatoes, chicken broth, and bay leaf.
  4. Bring to a boil and simmer, uncovered, for 20 minutes.
  5. Remove the bay leaf.
  6. Puree the soup in a blender or food processor.
  7. Pour the soup into a tureen and stir in the sour cream.
