Ingredients

  • 4 c. chicken broth
  • 1/2 c. thinly sliced carrots
  • 1/2 c. thinly sliced celery
  • 2 Tbsp. lemon juice
  • 1/2 tsp. lemon peel
  • 3 c. drained, cooked white beans
  • 2 Tbsp. chopped parsley
  • 1/8 tsp. pepper

Instructions

  1. Combine chicken broth, thinly sliced carrots, thinly sliced celery, lemon juice, and lemon peel in a saucepan.
  2. Simmer covered until carrots are tender.
  3. Stir in drained, cooked white beans, chopped parsley, and pepper.
  4. Heat through and serve.
