Ingredients

  • 24 medium cucumbers
  • 8 cups water
  • 2 cups vinegar
  • 1/4 cup mustard seed
  • 1/2 cup salt
  • 1 teaspoon curry powder
  • 2 1/2 cups sugar

Instructions

  1. Wash cucumbers and drain.
  2. Combine 2 cups vinegar, 8 cups water, and 1/2 cup salt to make a brine.
  3. Pour the brine over the cucumbers and let stand for 5 hours or overnight in the refrigerator.
  4. Drain the cucumbers well.
  5. Combine remaining ingredients: 1/4 cup mustard seed, 1 teaspoon curry powder, 2 1/2 cups sugar, 2 cups vinegar, and 6 cups water.
  6. Heat the mixture to boiling.
  7. Put the cucumbers into sterilized jars, pour the hot pickling liquid over them, and seal.
