Cutlets Parmesan

Crispy, golden chicken cutlets coated with Parmesan and herbs, perfect for a comforting family dinner or a satisfying meal with a side of pasta or vegetables.

Ingredients

  • 4 boneless, skinless chicken breast halves
  • 1/4 cup flour
  • 1/2 cup dry unflavored bread crumbs
  • 1/2 cup grated Parmesan cheese
  • 1 1/2 teaspoons ground oregano
  • 1 teaspoon garlic salt
  • 2 eggs
  • 1/3 cup vegetable oil
  • salt to taste

Instructions

  1. Using a sharp knife, remove and discard any excess fat and gristle from chicken breasts.
  2. Cut away white tendon from fillet. Place one breast half, smooth side down, between two sheets of waxed paper.
  3. Pound the cutlet until it is about 1/8-inch thick. Discard the waxed paper; repeat with remaining breasts.
  4. Dust pounded cutlets with flour on a clean sheet of waxed paper; shake off any excess.
  5. Mix together bread crumbs, Parmesan cheese, oregano, and garlic salt in a shallow bowl.
  6. Dip each cutlet first in beaten eggs and then in the crumb mixture.
  7. Set cutlets aside on a wire rack until ready to cook.
  8. Heat vegetable oil in a skillet over moderate-high heat until almost smoking.
  9. Place 2 cutlets in the skillet and fry until crisp and golden brown.
  10. Turn over with tongs and fry on the other side about 1 to 2 minutes.
  11. Drain on paper towels and fry remaining cutlets in the same manner.
  12. Sprinkle lightly with salt and pepper before serving.
