Ingredients

  • 1 cup butter
  • 2 cups sugar
  • 2 eggs
  • 1 1/2 cups applesauce
  • 4 cups flour
  • 1 pound white raisins
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1 tablespoon hot water (to dissolve baking soda)

Instructions

  1. Cut gumdrops into small pieces.
  2. Cream butter and sugar together until light and fluffy.
  3. Add well beaten eggs to the creamed mixture and mix thoroughly.
  4. Alternately add flour and applesauce to the mixture, mixing well after each addition.
  5. Stir in dissolved baking soda, vanilla, and any nuts if desired.
  6. Fold in chopped raisins, gumdrops, and optional candied cherries and pineapple.
  7. Pour batter into greased loaf pans or a tube pan.
  8. Bake slowly in a 250°F (120°C) oven for approximately 3 hours or until done.
  9. Allow to cool before removing from pans and serving.
