Ingredients

  • brook trout
  • 1 egg
  • cracker crumbs
  • salt
  • pepper
  • shortening or oil
  • butter

Instructions

  1. Wash and dry the brook trout, keeping the heads and tails on.
  2. Beat the egg, add a little water, and mix.
  3. Season the cracker crumbs with salt and pepper.
  4. Roll the fish in the beaten egg mixture, then in the seasoned cracker crumbs.
  5. Put a small amount of shortening or oil in a frypan.
  6. Cook the fish over not too high heat until browned on one side.
  7. Carefully turn the fish with a spatula to cook the other side.
  8. When both sides are browned, cook the fish briefly on their backs and stomachs.
  9. Just before finishing, add a small amount of butter to enhance flavor.
