Ingredients

  • 1 envelope unflavored gelatin
  • 3 Tbsp. fresh lemon juice
  • 1 heaping cup pureed avocado
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1/4 tsp. salt
  • 1/8 tsp. pepper
  • dash of cayenne
  • 1/4 tsp. onion salt
  • 1/4 tsp. dried dill weed
  • 1 cup cooked small shrimp

Instructions

  1. Lightly oil a 1 1/2-quart ring mold.
  2. In a large bowl, soften the gelatin in 1/4 cup cold water.
  3. Add 1 cup boiling water and the lemon juice to the gelatin mixture.
  4. Chill until slightly thickened.
  5. In a blender or food processor, combine the pureed avocado, sour cream, mayonnaise, salt, pepper, cayenne, onion salt, and dill weed.
  6. Mix until smooth and well combined.
  7. Fold the gelatin mixture into the avocado mixture.
  8. Pour the mixture into the prepared mold.
  9. Refrigerate until set, about 2-3 hours.
  10. Unmold onto a serving platter and garnish with cooked small shrimp if desired.
