Ingredients

  • 2 Tbsp. shortening
  • 1/4 c. all-purpose flour
  • 1/4 tsp. baking soda
  • 1 Tbsp. sugar
  • about 1 c. buttermilk
  • 3/4 c. yellow stone ground corn meal
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 1 egg

Instructions

  1. Preheat your cast-iron skillet or corn stick pans and heat the shortening until it's smoking hot.
  2. In a mixing bowl, combine the all-purpose flour, baking soda, baking powder, salt, and sugar.
  3. In a separate bowl, whisk the egg and then add the buttermilk.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
  5. Carefully pour the batter into the hot skillet or pans, ensuring even distribution.
  6. Bake or cook until the top is golden brown and a toothpick inserted into the center comes out clean, about 20 minutes.
