Dad'S Bran Muffins

Ingredients

  • 2 c. flour
  • 2 Tbsp. sugar
  • 1 1/2 c. bran
  • 1/4 tsp. salt
  • 1 1/4 tsp. soda
  • 1 to 2 Tbsp. orange rind
  • 2 c. buttermilk (1 Tbsp. vinegar to 2 c. milk to sour the milk)
  • 1 beaten egg
  • 1/2 c. molasses
  • 2 to 4 Tbsp. butter

Instructions

  1. Combine and stir well the flour, sugar, bran, salt, soda and orange rind.
  2. Beat remaining ingredients. Combine dry and liquid ingredients with a few swift strokes. Fold in, before dry ingredients are entirely moist, the 1 cup nutmeats or 1 cup raisins and 1/2 cup mashed bananas.
  3. GREASE TINS WELL. Bake 25 minutes in 350° oven. Yields 22 (2-inch) muffins.
